Thick Green Smoothies

Makes 3 large green smoothies

3 stalks celery, chopped
1 cucumber, skin on, chopped
2 green apples, chopped
1 packham pear, chopped
3 big handfuls of kale (cavolo nero will work if you’re in Italy)
2 big handfuls of spinach
Juice from 2 whole lemons
4 teaspoons peeled fresh ginger (you can add more to taste)
2 kiwis
ice cubes
some water to blend
(add some fresh mint if you like!)

Place all ingredients in a blender and start by adding 1 cup (250ml) of water to get it going. Blend until smooth and keep adding water until it reaches a ‘smoothie’ consistency. Pour and drink.

If keeping in a bottle to drink later, the ingredients will expand and you will probably need to add water and re-blend or shake before drinking.
